Boar's head makes a roast beef and a turkey that have less than 80mg sodium per 2oz. (most deli meats have like 400+!)
would you give this to LO? I'm admittedly undereducated about nitrates/nitrites...but they can't have a ton of that in them if the sodium levels are that low, right? Is there such a thing as nitrate free meat?

To be honest, I haven't thought about it much so I don't know enough to answer about whether I would, or when I will, give Ty lunch meat. That being said, I know there is nitrate free bacon (I ate it while PG), so I imagine there is nitrate free lunch meats too.
I'm pretty sure I have read that the nitrate free kind just has a "natural" additive that basically produces it's own nitrate/nitrite. Some form of celery or something like that.
I'll have to look around for the sources but I'm pretty sure I remember the nitrate/nitrite free not actually being better for you.
