If you've ever been to the Melting Pot restaurant

Does anyone know what kind of meat I would need to buy to have the red meat that they serve on that tray of raw meat?  I'd like to make fondue for my DH's birthday since we went to the Melting Pot for my bday and loved it.  Too expensive to go again so soon, so I'd like to cook something similar.  We got a fondue set for our wedding and have never used it. I know nothing about buying red meat/steak since I rarely eat it.

Yep, it is super good filet cut into cubes.  I love that place.

We fondue every New Year's Eve and we actually make veal scallopine--it's breaded with a combo of breadcrumbs, lemon zest, and garlic powder.  After many years of experimenting with different meats and veggies, this is the only meat we do now.
