Nico has asked for Chicken Spaghetti for dinner. I've never made it but he's had it a daycare. He says it's his favorite. I've never even eaten it. Anyone have a recipe they like? If not I'll just make one I google off the internet.
Note: Recipe calls for "cream o' " soup; when I made this, I substituted a homemade version for that part. (And that is why I rarely make this, it's a little time consuming if you go that route. My mom makes it pretty regularly, though--her recipe is a little different.)
I sautee a couple chicken breasts in olive oil, add in squash and onions when they're about 2/3 done. When chicken is done, I take it out, make my sauce in the pan with the onion and squash, then chop up the chicken and dump it back in. Simmer while the noodles cook.
You might want to clarify if the chicken spaghetti is red or yellow to avoid disappointment.

I am making this for dinner tonight too, but I'm making the lazy man's way.
one can of chicken
half an onion
1/4th green bell pepper
cream of chicken or mushroom soup
5 oz spaghetti
1/4th cup chicken broth
8 oz mexcian Velveeta cheese
Cook the noodles
saute the chopped up onion and bell peppers, add in the chicken, soup, broth and cheese and mix until the cheese is melted
add to the noodles and bake at 350 for 30 minutes.
