MIL is going in for a major surgery in March. Once she is home, the recovery period is about 3 months. I'd like to make some quick dinners that FIL can just throw in the oven to help them out.
I would like your recipes for dinners that can be pre-made and frozen and just thrown in the oven, like casseroles, soups, or pasta dishes, etc.

This. I do this all the time - make more of a meal b/c it isn't any extra work, and then freeze a container for a later meal.
Once a month mom has a lot of great meals that are easy and inexpensive. I also like to freeze beef-vegetable soup, cavatini, chicken pot pie filling (then you can reheat and serve over biscuits), and chicken with stuffing and cream of chicken soup.
