spinach ?

If I wanted to make a spinach lasagna with fresh spinach...how would I prepare the spinach beforehand? Slap the leaves in their uncooked and let them bake with the rest of the lasagna? Or precook them?

Probably a really dumb question but hey, you gotta learn sometime!

  • I would probably saute the spinach leaves with garlic and onion if the recipe calls for it or you could probably put the leaves in the lasagna.
  • If you precook, I'd probably just mix them in with the cheese, but you could just make a layer of them, rough chop them first. Either way would be yummy!

  • I make it w/ fresh all the time. I just throw a layer of it in between cheese and sauce.

  • If you've got an extra 10 minutes, it's a good idea to get the excess water out first so it doesn't make your lasagna runny. I would throw it in a pot with a tiny bit of water or olive oil in the bottom, heat it up for a few minutes until the spinach releases its own water, and let the water cook off for 5 mins or so. Then take it out and press/squeeze it in a towel or with the back of a spoon in a strainer.
