We had a lot of fun in Corpus.  DD was almost 2 and loved the aquarium.  We stayed at the Omni, it was really nice and a great package deal with aquarium tickets and gifts for the kids.  And milk and cookies at bedtime

There is a lot to do there but I find the beaches sub par. More of what you're in to

If you want a nice beach in Corpus, drive just a bit south to Padre National Seashore. It is a National park so no hotels or restaurants right on the beach. The beach is way nicer than in Corpus itself.

The Omni is great and has an awesome pool area. It's also right on the bay and you ca walk along the water..there are some pretty cool parks with playscapes.
