I am making a chicken dinner tonight. I don't cook a whole chicken often, but when I do, I do mashed potato and a veggie- sometimes stuffing, too. I am looking for something different. I'll still do a veggie (i'm thinking baked parmesan asparagus? maybe not?) but need a new carb. Any awesome potato dishes? Something else? Or is it un-american to steer away from mashed potatoes?

Roasted red potatoes are always a hit around here. Maybe a rice pilaf?
I couldn't bring myself not to have mashed potatoes, corn, gravy, etc. lol My mom is cooking a turkey dinner Wed and I can not wait!
I love rice with chicken- I like the Rice a Roni Long Grain and Wild Rice. Boxed, but good!
I second the rice pilaf or the roasted potatoes.
Other suggestions:
roasted cauliflower, roasted asparagus, scallopped potatoes, cornbread casserole, zuchinni pancakes, stuffed mushrooms, garlic mashed potatoes, cheesy mashed potatoes, corn muffins, sweet potatoes

I'm a fan of mashed potatoes with roasted chickens. You could always fancy up the mashed potatoes by using dill cream cheese and chicken broth. I love cauliflower and cheese sauce, or green beans with a little lemon juice.
