Jell-o pudding?

So I know the mix itself is dairy free, and I attempted to make it with rice milk in order for DD to try some. It didn't thicken at all...has anyone had success making the instant pudding with a dairy alternative milk? The only safe milks for us are rice and coconut. Thanks!

  • Anything other than cow's milk won't thicken. It's a reaction between the mix and a protein in the milk that causes it to thicken. The "cook and serve" ones will usually thicken using an alternative milk.

  • Only the cook and serve will work.  I made mine with coconut milk.  It's not quite as thick while it's on the stove but once you refridgerate it for a few hours it will thicken.

  • I have made tapioca pudding with the unsweetened coconut milk and it worked out fine.  Not sure about the instant puddings tho....
