I feel like we are in a breakfast rut. (We are also in a lunch and dinner rut, but I'm thinking about breakfast now.) My kids have a rotation of :
cereal (Cheerios, Mini-Wheats and Kix are favorites)
oatmeal
pancakes
waffles
eggs (sometimes on weekends)
These items are generally served with fruit (and lots of it--you should see my fruit bill!) and sometimes with sausage.
The only "obvious" breakfast item I am missing is french toast--I love it, but rarely think to make it. They already have yogurt for an afternoon snack almost every day, so I don't want to do yogurt.
What else can I try?

sometimes we do whole wheat toast with a little cream cheese or peanut butter - not very exciting but different than above
how about quiche? you could put broccoli, ham, or other stuff in it to mix it up. i guess it's a little more bruch/lunch like though.
But if you're getting bored, you could try making banana/pumpkin/zucchini bread or muffins. My kid LOVES that kind of thing. I typically bake something on the weekend and then we eat it during the week.

waffles (J loves the mini waffles, he calls them "little tiny waffles"), usually with peanut butter and honey or apple butter
pancakes and muffins (on weekends usually)
I recently made these energy bites (subbing out chocolate chips for raisins) and I've been giving him those too because I think he needs more protein in the morning.
I'm also planning to try hard-boiled eggs.

About once a month, I make a big batch by doubling the recipe which makes about 28 muffins. Then I put them in a zip lock bag in the freezer. Each morning, I pop one in the microwave for 30 seconds and it's ready. If you decide to do this, make sure to use the foil cupcake liners and spray them first so that they pop off easily. The paper ones stick to the muffin more.
Also, to make it healthier, I use applesauce instead of oil. Also, I prefer craisans to raisins in mine.
Thanks ladies--these are all good ideas. I posted this because somehow we were out of waffles and oatmeal, I didn't feel like making pancakes or eggs, and DD didn't want cereal. I felt at a total loss. I suppose I could have just done yogurt and fruit and made sure they had something else for a snack.
But I do love the ideas for quiche, muffins, energy bites and adding different condiments like peanut butter, cream cheese and honey.
During the week, DD eats waffles (frozen) or oatmeal every day. Then she goes to school and eats cereal (it's second breakfast, I guess).
I would like to say that on the weekends, she gets something more substantial, but to be honest, it's usually the same. Because she eats earlier than DH and I, often she will eat her waffles/oatmeal at 8:00, then we'll go out to breakfast or cook a big breakfast for ourselves, which ends up being her morning snack (around 10). Usually it's pancakes or eggs of some sort.
I think in the summer I'll start yogurt in rotation for her, too. Right now, if she gets it, it's usually part of dinner.
Warner eats frozen waffles at least 3 out of 5 week day mornings. He loves them. This has been going on for about 6 months. Before that, he wanted oatmeal (fixed the exact same way) every single morning.
Because I like breakfast a lot, on the weekend, I mix things up and will make a slightly fancier french toast or some yummy cheesy scrambled eggs or a fried egg sandwich. But on the weekdays, especially preschool mornings, I try to keep things easy.
One fun thing I do that he loves is to make a "banana man" out of his waffles. After I toast the waffles, I just make a little face on it using the bananas. I cut the tip of the banana (about a 1.5" piece) and put it in the middle and use two regular round slices for the eyes, raisins as the centers of the eyes, and then I cut a couple slices in half and arrange them as the mouth. And finally, I sprinkle raisins around the top as the hair. He thinks this is the best thing ever in the whole world and eats every bit of it :-) (and I feel like super mom...and those feelings are few and far between these days!)
