Can anyone do that in their car? the problem I see happening is being able to buckle the booster. If it's in the middle the seat pretty much covers the buckle. I've seen a buckle extender that sticks out and the reviews are mostly for use with booster seats but I wonder if it's really safe.
We do have a third row but it's not really for everyday use. DD would basically have to get in through the trunk since you'd have to remove a car seat to tilt the 2nd row forward and get in. It would also eat up half my trunk space. We have a Hyundai Veracruz that I love. It's a 2010 so I'm not ready to trade it in yet if I can avoid it.

You can use the seat belt just as securly as the latch...I know Chico makes latch so easy but worth a try.

It is perfectly safe and legal but a pain to have to buckle and unbuckle every time. We have done it while traveling but I'd never chose to do it on a daily basis. With an SUV it should not be an issue getting them all in, just a matter of trial and error.

We actually went to a carseat tech and paid for her help to solve the problem since DD's carseat and the infant bases would not fit across DH's car. It's old, but we're waiting as long as possible to avoid buying a new car.
We ended up switching DD to a Graco Nautilus (5 point harness booster seat) and the boys are in Coroco Combi's (convertible car seats) . Everythign is rediculously tight and DD has to climb in through the front seat. The Combi's have a pretty low rear facing weight limit, so we'll probably have to switch the boys to another carseat before they are ready to be forward facing, but at least it will buy us another few years with DH's car.
Totally legal and most bucket seats are made to accommodate this. Its just as secure, if slower, than the base in terms of attachment to the seat.
We have a Ford Flex. We have the babies in carriers/bases in the 3rd row. We have our DD1 (in a booster seat) in the second row. It's sort of a pain to fold down the seats but was our best option and the booster moves so easily since it just requires a shoulder belt.
I don't know what you mean by your 3rd row isn't for every day use. But this configuration was our best choice until we move to Radians and all 3 kids fit in the 2nd row (and we can reclaim some cargo space!)
