Crap! I'm glad you posted this. I said I would make a crock pot meal tonight and I totally haven't done it yet. Luckily, I don't think it has to cook all day since it's tofu and not meat. I'll post a link in a sec if you want, but I think it's basically tofu, honey, soy and OJ in a crock pot. I'm subbing fresh oranges for the orange juice.

Rotisserie chicken and a big salad. Last night was black bean and sweet potato enchiladas and quinoa salad (a take off of one that Mrs AJL posted once) - the enchiladas are on Whole Foods' site. Tomorrow night is some beef and noodle thing (DH is cooking) and then Friday night is a Tempeh Curry dish (all from Whole Foods' site).
tonight something simple either PW's Sloppy Joes or Salisbury steak. it was just the kiddos and i mon night and I made this, it was really good. i did change it up a bit though. here are the notes i made on the changes i made (sorry they are rambly!)
I omitted the bell peppers (not a fan) instead used some green chilies
(not a lot). I also added corn and served with some fresh avocado
slices. (of and I sauted the zucchini first then removed it from the pan
to let the rice boil/cook (did not use instant rice).
I'd planned on reheating the leftover bacon cheeseburger meatloaf and broccoli with cheese sauce, but breakfast for dinner is sounding super yummy so we may do that instead.
breakfast for dinner -- if i'm feeling up to it, probably buttermilk waffles or pancakes. but probably just scramble some eggs and toast! very inspiring, no?
