KA's tacos are in the crock pot!

I can't wait to eat them later- I'm hoping I did it all right. I need to start cooking more.

  • Did you make it w/ rotel or w/ heb's fresh pico? I found that I prefer it w/ the fresh (med) pico.

  • I think it's the most forgiving recipe I've ever found.  I've forgotten to add half of the ingredients, used fresh chicken instead of frozen, cooked on high instead of low, used regular taco seasoning instead of the chicken stuff, etc..  They always turn out pretty good, and IMO they're even better on day 2.

  • It's also easily and deliciously tweaked into chili, as I discovered from Orangefelt.

    My version- just add a couple tablespoons of tomato paste, a can or two or beans, a few cups of frozen corn, a cup or 2 of chicken broth, and presto! I garnish with cheese, sour cream, and cilantro. Yum.

    I just use Swanson organic black beans, because that's what a buy in bulk at cost.co. But I think orange uses 1 can of kidney and another of pinto or white. In whichever case, I'd use one that isn't seasoned, so as not to interfere with what's already going on.
