I need to plan the rest of this week and go to grocery store after naptime since it didn't get done yesterday. I have no motivation though. I was just looking through Pinterest for inspiration. I hate meal planning!

  • Tonight is chick-fil-a (hey, it's spirit night...)

Tomorrow is probably turkey burgers (there's a good Rachel Ray recipe - I think it's meatloaf turkey burgers - it has finely chopped apples in it and it's yummy).

Wednesday - maybe chicken soup and some frozen quiche (the soup will be homemade - I just have to make it)

Thursday - fish of some sort

Not necessarily in that order :)  I think I might also buy a pot roast for the crock pot for some time this week/weekend.

  • Mon: frozen ravioli from Costco and some bottled pasta sauce. We keep it easy for DH on Mondays. DD has gym and we don't get home until 7.

    Tues: Soup, maybe chicken noodle

Wed: Shredded beef tacos  https://cookingclassy.blogspot.com/2012/01/shredded-beef-tacos.html I have some roasts that I need to use. Crock pot because we don't get home until 7 again

    Thur: Fish tacos

    Fri: Pizza or out

On the flip side, if I did that every night, we'd have a TON of leftovers go to waste and I'd probably explode!  lol  We usually make some fresh bread to go with the soup and it totally has meat and veggies IN it!

Soup is a staple at my house. I always have carrots and celery and then just wing it from there. It's my poor man dinner when I don't have anything else.

  • Yea we are pretty wasteful. But I don't think that would change with soup!! Lol! Right now, we have 1/2 lb taco meat, shrimp scampi, and leftover pot roast w/carrots and potatoes all likely going in the garbage tomorrow. How would I make a soup with that stuff?! Yuck!! :)
  • If I decided soup was dinner, dd would need a minimum of 3 snacks between then and bedtime. And dh and I would be at DQ within the hour.  I would at the very least need to do sandwiches with it.

I always make beef vegetable soup with leftover pot roast.

Stick it in a crock-pot along with some celery, frozen mixed veggies (carrots, green beans, corn, etc.), chopped up cabbage, a diced onion, beef stock and some V8 tomato juice.  Let it cook on low most of the day and serve with cornbread. Yum!

  • Last night: Pizza w/BBQ sauce, pineapple, green peppers and ham. Made it at home with a store-bought pizza crust.

Tonight: Salmon and asparagus. Had it last week and it was a hit plus salmon is still on sale, so we're having it again. Super fast and hardly any clean-up.

Tomorrow: Sloppy joes and whatever veggie we pull out of the freezer. Green beans? Broccoli?

Wednesday: Teriyaki chicken and bok choy

Thursday: Some kind of chicken-based soup. My kids and DH love chicken soup and will eat it several times a week if it's available. Chicken noodle is our stand-by. They never seem to get tired of it.

Rest of the week? Not sure yet.

  • The user and all related content has been deleted.
  • Turkey meatballs over whole wheat pasta, my homemade marinara sauce (made a big batch this weekend), and salad.

    Tues: Leftovers from tonight

Wed: chicken tacos, homemade tortilla chips, guac

Thurs: baked tilapia, brown rice, broccoli

friday: homemade pizzas (with leftover sauce) and/or whatever toppings everyone wants

sat: chili, quesadillas, and some other snacks (having friends over to watch football)

Sun: leftovers from sat. if we have enough, if not i'll be making beef stew to eat next week so we'll dip into that.

  • Tonight was homemade stuffing with chicken baked on top and spinach.

Not sure about other nights, but will be making burgers one night and we do lots of soup.  Works for DH, he is a big soup eater.
