I've never actually seen any in person - any difference between, say, the $55 one at Walmart versus a KidKraft one for $100?

Usually the less expensive ones may have softer wood, so would scratch more easily. The hardware may be different. On expensive furniture the hardware is more hidden so you don't see the heads of screws obviously on it. But for a toddler bed, I don't think there would be a noticeable difference between what you mentioned.
