Help, too much crepe batter

Today is DD's birthday and she wanted crepes. I doubled the batter and ended up with too much! Can I refrigerate the rest until tomorrow morning or do I need to make the crepes and then refrigerate?

  • Ha, I watched Good Eats last night and it was about crepes.

    The batter is good in the fridge for up to two days, you can make more crepes and refrigerate them for up to a week, or you can put wax paper in between each crepe, stack them, and put them in a zip top bag in the freezer and they'll hold for a month.   

    He also had a really good recipe that involved putting the crepes in a muffin pan to make little cups and filling them with cheese, bacon, eggs, and other breakfast foods, baking it for 15 minutes, and making little breakfast cups.  It looked really yummy.

  • You can refrigerate the batter.  I always make the batter the night before (that's how my grandmother did it, she would never make the batter and make crepes right away...never asked why).

    Or, if you want to make the crepes they freeze really well and can be heated up in the microwave, I do that often so I have a quick and easy breakfast.

    Now I'm going to have to make crepes...thanks

    I think you let the batter sit overnight because it makes the batter somewhat thicker, so it's easier to work with. 

    My little brother loved crepes, he would make them every morning for breakfast when he was in third grade. (With supervision, of course.) My mom would help him make the batter the night before, and then he'd get up early and make his own breakfast. It was so cute!
