if you've frozen fly's creamy ckn enchiladas...

Do you have any tips?

Did you freeze them assembled in a pan, or did you just freeze the chicken mixture and then thaw that and make the rest when you were ready to eat them?

I appreciate any suggestions - I'm making 2 pans of these to freeze over the weekend and I want to be sure they'll be as yummy after they've been frozen as they are fresh.  Yum.

  • i sub corn for the flour tortillas.  roll them up.  i don't cook them in advance.  i put the cheese in a small ziploc baggie, the sauce in another ziploc baggie.  lay that flat on top of the tortillas.  then i freeze.

    when i want to eat them, i defrost it overnight, throw on the sauce and the cheese and bake.  tastes great and i've never had them soggy that way!

    This, except I don't freeze the cheese.  I just make sure I have some fresh on hand when I want to cook them.  Oh and I do use the flour tortillas.
