How many days in advance can I make a cake and make icing? The kids' cake smash pics are Friday and I'd like to make one cake tonight and the other and the icing tomorrow night but I worry about it getting funky or the icing doing weird things (I won't ice the cakes until the morning of the pics).
Can you tell I dOn't bake often?

i think your plan is fine, especially since they won't know if it's dried out or not (which would be my only concern this early)
good luck on your pics...my LO just cried and cried as soon as we put the cake down. at 14 mos she still refuses to try cake!
i think it will be fine to make the cakes tonight and tomorrow and the icing tomorrow. i've done that before and it's been fine.
when you pull the icing out of the fridge to frost it, just leave it at room temp for like an hour or so to get it to soften and be more spreadable.
I think I made Will's cake a week in advance and froze it. Cakes do very well in the freezer (as long as you take them out in time to thaw). So by corollary, I assume the cake would do well if you refrigerated it and the frosting and let it warm up to room temp before serving. In fact, I would keep the cake cool and just bring the frosting to room temp before icing - you may find that it's easier that way!
Oh, and take the cake out of the pan and wrap it in two layers of saran wrap ater baking/before refrigerating.
