Freezer Meals

I know we've been down this road before, but I'm struggling to come up with something to cook this weekend to finish filling the freezer before baby comes. I'd love some ideas!

So far I've got:

Chili

Short ribs

Stew

Pot Roast

Green Curry with Chicken

Chowder (without the fish or scallops, we'll add those when we reheat the broth)

I have GD, so I'm trying to avoid making the sorts of pasta/carby stuff that I would normally freeze because I like to make enough to have a meal or two for us and then have enough leftover to freeze.  So lasagna is out.  What am I missing here?

  • God bless you I just don't have the energy (or freezer space) to do that.  My Mom is insisting on driving down (she's about 75 min away) every few days to bring a casserole (good excuse to see her first grandbaby I think) but if were that ambitious I would maybe do enchiladas (with low carb tortillas) and some other soups.

    You know, if we didn't live way the f out in the xburbs, with really limited takeout options (bad pizza, even worse chinese and inedible mexican) I would have skipped the whole freezer stocking exercise.  But if I want to eat anything decent in the weeks after birth, I've got to stock up now.

  • This is what we froze.  We also got the vaccum freeze ziplock bags (off amazon) to help with space in the freezer and they worked great.  We also got a bag of frozen chicken breast and vegetables at Costco that will be easy.  I am also planning to cook and purree some carrots that I can put into whole wheat Mac/Cheese, I think this will be a great go-to lunch or even snack for me. 

    - Pork Chops (both mushroom stuffed and an apricot/ginger glaze)

    - Pulled Pork (cooked in a crock pot)

    - Black Bean Soup & White Chili (although I've since been warned that baby won't like this assuming I'm able to bf)

    - Muffins (the fiber brand, froze on cookie sheet, then put in bags so the muffin tops don't freeze to the bag)

    - Lamb Leg (we justed cooked 2 for Christmas)

    - Stroganoff (crock pot with stew beef)

    - Quiche (again, just cooked 2 for Christmas)

    I use the foil pans (easy clean up) with double layers of foils to cover. Then you can write on there what is in the dish and the date it was prepared.

     

  • The best thing I can do is link back to the post I have saved. Tons of recipes to choose from! HTH a little (even though there are many carboy things), since I have yet to actually make anything :-/

    Sloppy joes - portioned in muffin tins
    Beef & bean enchiladas- frozen without sauce
    Hamburger soup
    Chicken pot pies
    BBQ chicken - diced & cooked (great for making quesadillas)
    Spaghetti sauce
    Garlic cheese bread
    Cheesy meatloaf
    Muffins

    What about sweet &sour chicken? Or pinapple chicken? I made it in the slow cooker, and put in baggies for easy defrost in the microwave. Then keep minute rice on hand to cook with it (I don't have GD, is rice allowed?)

    I second a PP on the pulled pork. Again, it's easy to throw in the slow cooker for a day and then shred, divide, freeze. Warm up, add BBQ, plop on top of buns.

    Also, I've been converted into a quiche lover. It's easy to throw in whatever stuff you like: green peppers, onions, broccoli, sausage, the list goes on. And the leftovers are great to take to work, or have for lunch the next day. You can use either pre-frozen hashbrowns, or pie crust.

  • I have 2 lasagnas, tuna casserole, meatloaf, 2 bags of meat sauce for pasta and this weekend I will be adding quiche, chicken pot pie, pulled pork and chilli.  I know I am not going to want to cook or clean so I put everything in the foil pans!! 
  • Enchiladas (I made three pans with corn tortillas a few nights ago) and a batch of broccoli cheese soup that froze up beautifully in gallon zipper bags.

  • I froze a couple of quiches and made 2 pans of King Ranch Chicken casserole and then I stocked up on some meals at Sam's Club like enchiladas and parmesean crusted tilapia.
