i'm on my phone so i don't have the link, but there his a ham, spinach and swiss cheese quiche on myrecipes.com that is super easy and yummy. takes very little time to prepare (not done the day before). i'm trying rosie's french toast casserole forchristmas morning that is in one of the posts below.
My grandmother always makes a strata close to this, you let it set overnight in the fridge and then bake in the AM. We never garnish it, but I imagine it would be good. I'm gluten intolerant, so we use corn tortillas as a substitute for the flour - but I've had flour before and both ways are good.
We just do what my mom calls farmer's breakfast. It's eggs, ham/bacon, onion, and potatoes. You mix them all together in the skillet. I like to do the potatoes and the onions first so the potatoes get a little soft, then I add the ham/bacon and lastly the eggs. Roughly 2 eggs pp.
I love it. (and I love it more now that I am pregnant.) I can't wait to have it in the morning tomorrow. I haven't had farmer's breakfast for Christmas morning in a very, very long time. I'm so excited. (it's the little things sometimes)
