Just thought of this--you could also make a quiche if you don't want 4 pies sitting around. Eggs, milk, cheese, spinach/ham/rotel & corn/bacon and a couple spices. Bake at 350 till firm.

Quiche is probably easier, but if you want another savory treat, I love tomato pie. I only use half the mayo it calls for, but it's still super rich and delicious.

Just found this magic lemon pie. Maybe not the easiest ever but YUM!
"Ice Cream Pie"... any flavor jell-o and mix in ice cream and chill. Works best with graham cracker crusts.
Other than that, pumpkin is easy and so is buttermilk pie. Both are mix/pour/bake.
