ETA: I can proudly say, though, that yesterday an old co-worker I ran into said, "I hope you have a good birthing experience!" as I was walking away and I did NOT say, "you, too!" Lol. THAT would have been embarassing!
Um... I work with a few people from India (mainly Mumbai) who celebrate Christmas. In fact, I was sitting with a vendor (Indian) in between meetings and he was telling me about all the gifts that he had to finish ordering online to ensure they arrived by Christmas. Considering the size of India, there is a decent Christian population. It is certainly not celebrated with the fanfare it receives in the US, and it is not a big holiday overall in their culture, but you may not have been wrong with your "You too."
If it makes you feel any better last year I worked for an attorney's office that handled mostly real estate and we had this one Indian guy who we got ALL our refinances and referrals through (so he basically was the person keeping the firm running). My boss decided it would be nice to send him the biggest most expensive elaborate package they had from Omaha Steaks for Christmas....yea they don't like being surprised with 10 lbs of dead cow....
Haha, my SO does this everywhere! At a restaurant when the waiter says "Enjoy your meal" he says "you too", at the movies, etc. It's pretty funny to see their expressions.

Same here. I try and be conscious about my response so they know I am really listening and appreciate the well wishes, but it just happens!
I work with pilots every day...I say "have a good flight" and they respond "you too!!"
