I am having a few family members the day after xmas, but am leaving for FL a few days later, so I want to make just one casserole so I don't have a lot of clean up.
Not really casseroles, but you could do Enchiladas, or Shepard's Pie, or even Chicken Cacciatore.

Or I was going to say chicken pot pie. My favorite easy casserole is to make homemade mac and cheese and add taco meat to it. Crush up some corn tortilla chips and sprinkle some shredded cheese on top and bake it for a bit. Everyone in my family loves it.
Chicken casserole - thawed chicken breasts cut up into 1x3 (ish) pieces. Mix a can of cream of chicken, a can of cream of celery, 1 cup sour cream, a little bit of garlic powder together. Make a boxed stuffing mix in the microwave according to boxes' instructions. Layer in a 9x13 pan sauce, chicken, stuffing, sauce. Bake at 350 for 1 hour.

Or you could do an easy rigatoni bake: boil & drain one box rigatoni, add one jar of your favorite spaghetti or marinara sauce, 1-1.5lbs of italian sausage (broken up and browned in a skillet), and one package of shredded mozzarella (or shred 2c on your own). Bake at 350 until bubbly (about 20min).

I make augratin potatoes (sometimes the box mix if I am short on time) and add cut up ham and asparagus. You can also use peas or green beans if you prefer. I serve it with salad and crescent rolls.
Mock Lasagne - my absolute favorite meal and super easy. It's with cooked egg noodles, cream cheese + sour cream + chives, cooked hamburg + pasta sauce + a little garlic + white sugar. Layer and top with shredded cheese. Bake 35 min at 350 Serve with garlic bread and a big ceasar salad. Yum yum yum.

I would make a pan of lasagna.
