Well, we decided to try to keep things from getting out of control and since they get so much from grandparents and aunts/uncles we are keeping it at 3 gifts per child plus stocking stuffers. I like how it also goes along with the 3 gifts from the 3 wisemen.
DD is 2 yr old and is getting the FP Loving Family Dollhouse and some furniture. In her stocking are some disney princess fruit snacks, a couple of coloring books and a disney princess notebook b/c she likes to have something to scribble on while we are grocery shopping.
Grandparents are getting furniture for her dollhouse, Melissa and Doug Magnetic dressup dolls, crafty things.

Last year when DD was about the same age as your DD, she got the FP Loving Family Doll house and some rooms of furniture along w/an Aqua Doodle, books, clothes and puzzles
Her "big" gift is a barbie jeep (the ride on one). She is also getting playdough (her first set), several arts and crafts supplies, socks, panties, and a few other little toys.
Her "sentimental" gift (really more for me) is that my mom had saved all of my dolls as a child (cabbage patch kids) and gave them to me when I was pregnant with DD. I plan on setting them all up using some of the baby gear we got her (doll stroller, high chair etc) so that there are about 10 babies ready for her to play with when she wakes up that morning. I plan on letting her really choose her favorites and then putting the rest up for now, but I think she'll really enjoy them.
ETA: other ideas that are frequently used in our house are a magnadoodle and a small trampoline with a handle bar on it. Huge hits!

Around that age, DD's big gifts were an art easel and a FP Loving Family Dollhouse (Craig's List find). Big hits for both but the Loving Family Dollhouse came with lots of little pieces. You can consider doll stroller, shopping cart, dolls, art stuff, table and chairs, kitchen stuff, dress up stuff (huge hit for DD). DD's favorite toy right now is a rubber t rex we got her at a museum today! Books are always a favorite hit in the house too.
Between us/Santa he's getting a bike/helmet, a golf set, a few books, and 2 DVDs.
In his stocking he's getting socks, candy, bath crayons, stickers, and a few matchbox cars. Plus a satsuma
