Make ahead breakfast casseroles?

I am looking for something for Christmas morning... I am thinking of those breakfast casseroles you can make the night before, refrigerate overnight and then pop in the oven the next morning.

Got any recipes?

  • I make this one every year:

    8 slices white bread (you can remove the crusts if you want )

    1 lb. browned and drained ground sausage ( i like to use sage sausage)

    6 eggs

    2 cups of milk or half and half

    Salt and pepper

    8 oz. grated cheddar

     Butter one side of each slice and lay buttered side up, side by side in a greased 9x13 pan.Sprinkle sausage over bread, then a layer of cheese.Beat eggs, milk, salt & pepper and pour over sausage and cheese.Cover and refrigerate overnight.Bake uncovered at 350 for 35-45 minutes.

    If i have it on had i'll sometimes add a can of green chiles or i'll add some diced onions to the sausage when i'm cooking it.

  • Eggs Benedict is my all time favorite breakfast so I make this casserole every year for Christmas.  It seriously tastes just like eggs benedict!  I use this hollandaise sauce recipe.  It is so easy (you make it in the microwave!!!) and so yummy.  Enjoy!

    ETA: We also sometimes make Paula Deen's French Toast Casserole. insanely delicious

  • My mother always makes sausage balls. She will mix them the night before then throw them in the oven the next morning. I love them. It's sausage mixed with cheese whiz and bisquick.
