Need last minute dinner ideas.

We are having BIL and his girlfriend over for dinner tonight. She does not eat meat but loves all seafood.  I'm working until 6 and they are coming over at 7:30 so I need something that doesn't take a long time to cook.  Ideas?

  • Fish cooks super fast.

    I personally like salmon the best.  You can make a yummy marinade with the following (per 1 lb of salmon): juice of 1 lemon, 2 tbsp yellow mustard, 1T dill (you can sub fresh dill if you want but double it to 2-3T).

    Just drizzle some EVOO on your fish and then sprinkle on salt and pepper.  Then pour on the marinade.  Bake at 425 for 15-20 min until it is cooked through.

    Serve with rice or veggies.

  • I make the easiest salmon ever.

    wash/dry it.  Put it in a glass casserole dish.

    Pour zesty italian dressing over it.  (Maybe a cup??? I'm not sure.  Just cover it, and leave some in the pan, too).  I use the 'light' version.

    Put in preheated oven at 425.  Bake for 20ish minutes.  (Until you can tell it's flaky, and the opaque look of uncooked fish is gone.)   

    Serve with rice and veggies.

    Or you can sautee it!

    season with salt, and a little bit of cayanne pepper and cinnamon.

    Heat a tiny bit of olive oil on a pan (med/high)

    Sautee both sides for just a few minutes each.

    It makes the outside really crispy and yummy.  It does tend to smoke/crackle when I cook it... 

  • I put salmon, some butter, some lemon slices and some garlic and wrap it up in parchment paper. There is a fancy way to fold it so it stays closed, but I just use a stapler and staple it closed so it creates an envelope around the salmon (leave room for air).

    This makes a super moist piece of fish. So yummy and easy. I'd do a side of quinoa and steamed broccoli and some yummy bread.

  • I'd also recommend doing something on the grill. Steaks or burgers are always a hit and no marinating required. Serve with salad or vegetable of your choice. 

    We also do fajitas a lot. We get the premarinated fajita meat from Central Market, saute some peppers and onions and put on a tortilla. Easy quick meal.
