NBR - if you're lactose intolerant...

Can you have milk when it's baked/cooked into things w/o it bothering you?

I've got pregnancy induced lactose intolerance so I'm still learning how this all works.  So far, regular milk or ice cream will really bother me, but not cheese or other dairy products.  I'm making my baking list for Christmas and I need to know if I should substitute mootopia for the whole milk that my mac and cheese recipe calls for.  It calls for 6 cups, so it's a lot.  Up until now, I could stand a little milk (like in pancake mix or when scrambling eggs or making cornbread), but those are all baked too.   

Thanks for any info- I know that it might be different for everyone, but I thought I'd ask!

  • Something like mac and cheese might make me sick with that much milk in it, but usual baked goods with some milk don't bother me at all. And I can usually handle a decent amount. For instance, I can eat a bowl of cereal with real milk, but I can't drink the leftover milk in the bowl without getting sick.
    We have so much time, and so little to do! Strike that, reverse it.

  • I'm milk allergic, so I can't have any dairy cooked or not.  I would think that 6 cups would probably trigger some sort of reaction because, like you said, it is a lot of milk.

  • A lot of cheeses don't have much lactose in them, which is why you may not have trouble with them. I would totally use the lactose free milk - it's not going to taste any different, and it's waaaay better to be cautious with that. Who wants to spend the holidays sick!

  • I'm in the same boat as you - pregnancy induced lactose intolerance.  Ice cream, straight milk, egg nog, and anything with cream give me horrible stomach pains. 

    I can eat baked things without an issue, but things like scalloped potatoes, mac & cheese, etc that have a lot of milk/cheese in them are just as bad for me as straight ice cream.

    Have you asked your dr about lactaid pills?  My OB recommended I take it if I'm having something with a lot of milk in it and it seems to help a lot.

  • I had the opposite situation ... I'm normally lactose intollerant, but when I was pregnant, I could eat and drink as much dairy as I wanted - and that was a lot. 2 weeks after giving birth, milk was making me sick again. Pregnancy is so weird on your body!

    Anyways, mac and cheese with real milk - probably not a good idea. It's not the cheese, because as you've learned, cheese doesn't have that much lactose in it. But the milk, yah I'd go with Mootopia (2%, not skim, so it's not too runny) or lactose free milk. Cooking the dairy doesn't seem to have much affect. I can obviously eat it in things like cookies and chocolate because there is so little dairy. But meal-sized portions, like with mac n cheese, not fun.

  • I don't have an answer to your question but I take Lactase Enzymes before eating dairy and it allows me to digest it.  You might look into them.  They're pretty cheap.

  • I've been lactose intolerant since I was little and the things that bother me are milk, milkshakes, ice cream (I can eat a small amount without getting sick). Baked goods like cakes, cookies, pies with milk in it doesn't bother me but something like mac and cheese that has a lot of milk and cheese definitely can bother me but I take Lactaid pills any time I want to eat something with a lot of dairy. I also can toelrate drinking goat's milk. I also drink and have cooked with soymilk before. My advice is to still make the mac n cheese but either take Lactaid with it or make it with lactose free milk. You'll see as you eat what your tolerance level is, mine's changed over the years.

  • Thanks for all the advice ladies - I think I'll go w/ the lactose free milk to be on the safe side.  And I do need to look into those lactaid pills or something b/c I sure do miss my ice cream and Wendy's frosty....
