I have a bag of potatoes a friend gave me before she moved, I want to make soup but I'm just not finding recipes I like. Anything would be great! Crockpot is a bonus!

Mine is not crockpot (although I bet you could throw it in there on a keep warm or low setting and be fine).
4 large baking potatoes
1 stick butter
1/2 cup flour
6 cups milk
1 tsp salt
t/2 tsp white pepper
2 cups sharp cheddar cheese
8 slices bacon
1 cup sour cream
green onion (chopped)
Bake the potatoes. Cool. Cut in half lengthwise and scoop out pulp in chunks.
Melt butter in large saucepan over low heat. Add flour to make roux. Gradually add milk. Cook over medium heat stirring constantly until thickened and bubbly. Stir in potato chunks, salt, pepper, cheese, bacon and chopped green onion. Cook until heated through but do not boil. Stir in sour cream. Cook until heated through.
Mine is the best...if I do say so myself...and I do.
6 Bacon strips, diced
3-4 cups cubed peeled potatoes
1 box chicken stock
1 small carrot, grated
? cup chopped onion
1 tsp dill
1 tsp each celery salt
1 tab all-purpose flour
1 cups milk
8 oz shredded cheddar cheese
2 green onions, thinly sliced
In a large saucepan, cook bacon until crisp; drain and tear into tiny pieces. Add potatoes, bacon, broth, carrot, onion, dill, & celery salt. Cover & simmer until potatoes are tender, about 20-25 minutes. Combine flour and milk until smooth; add to soup. Bring to a boil; boil and stir for 2 minutes. Add cheese; stir until cheese is melted and the soup is heated through. Garnish with green onions if desired.
I've actually got this recipe in the crock pot as we speak... It's *really* good!
Baked Potato Soup
Ingredients:
- 5lbs Russet Potatoes, washed but NOT peeled. Diced into 1/2 inch(ish) cubes
- 1 large yellow onion, diced
- 10 cloves of garlic (you can use whole, crushed, or minced)
- 8 cups chicken stock
- 16 oz cream cheese (I used 8oz regular and 8oz lowfat)
- 1 TBS seasoned salt or all-purpose seasoning
Garnishes (optional):
- Crumbled bacon
- Shredded cheddar cheese
- Green onions
Directions:
- Add potatoes, onion, garlic, seasoning and chicken stock to slow cooker.
- Cook on high for 6 hours or low for 10 hours.
- Remove and puree the garlic cloves (if you used whole cloves) along with 1/2 to 1/3rd of the soup, and then reintroduce to the remainder in the crock pot.
- Stir in the cream cheese and allow to melt. Stir every 10-15 minutes until soup is well blended.
- Top with your choice of garnishes & serve!

What is that? Never heard of it!
Super simple is to take 2 cups of chicken broth or water & 2t of chicken bullion powder. About 8 potatoes peeled and diced.
Throw in the crockpot for 8 hours or so on low. About 1/2 hour before serving mash with a potato masher and add 1/2 cup half and half and 1 cup of cheese of your choice.
Super yummy!!!
