Anybody want to help me with pasta recipes?

I'm going to a pot luck Christmas party on Friday night and need to bring a pasta/main dish. Nomally I have lots of ideas but since I have to work that day till 5, drive home and make the dish, take Jack to sitters and then be across town by 7:30 I'm kinda limited on what I thought I could make. Any ideas? I would either need to make it the day before, freeze and bake the day of the party, Crock pot during the day, or something quick I can make in about an hour.

  • Fly's Stuffed Shells are awesome.  You could prepare them a day or two before and pop them in the oven when you get home to heat & melt the cheese.  You could do the same thing with a lasagna or manicotti.

  • We love this farfalle and sausage dish that is super fast and yummy.  I vary the veggies--sometimes using regular broccoli, or throwing in some cherry tomatoes, etc.  But the base is good, easy, and fast!
  • I make a pasta that is cheese and meat optional.  I usually add chicken. But it doesn't call for it. 

     1 box whole grain rotini

    4 zucchini, diced

    Sea salt to taste

    Olive oil

    1 clove garlic, chopped

    2 cups cherry tomatoes

    4 leaves fresh basil, cut into strips

    1/2 cup Parmesan cheese, grated

     

    Cook pasta according to package.

    Meanwhile, season zucchini with sea salt, heat olive oil in skillet, add garlic and saut? 2 mins. Add zucchini to skillet and saut? for 2 mins.  add cherry tomatoes and saut? until skins are slightly blistered and heated through, about 2 mins. Drain paste add to skillet and toss with basil and cheese.
