Girl - Persephone
We like names that are classic but uncommon. FWIW, DH's first choice boy name was Xavier (which I vetoed) and my first choice girl name was Ophelia (which he vetoed). Any other suggestions along those lines? (Middle name will probably be a single syllable Chinese name, last name is similar to Gilbreth.)

Persephone is a it out there for me. I like Ophelia, but since your DH doesn't, what about Odessa, Odette, or Octavia?
As for the boy name, I personally don't like "Ed" names, but there's nothing wrong with it as a name.

Edmond - I like it. I prefer the spelling Edmund but your spelling is legit too, so go with what you like.
Persephone - I really, really want to love it but don't. What about Penelope, Philippa, Althea, Phoebe, Cordelia, or Delfina?

Yes. I think Persephone sounds like you're trying to hard to pick a "cool" name.

Edmond is alright. I just don't like "Ed" as a nickname. It reminds me of the horse.
I really want to love Persephone, but it might just be a bit too much name. That said, if I heard someone named their daughter this I would probably think it was cool.
I also love Ophelia. But my DH vetoed it as well. What about Seraphina. It's another name I love (also vetoed by my DH), and kinda seems to be along the same lines as both Persephone and Ophelia. It also happens to have a beautiful meaning (and I'm not even religious).

Feminine form of the Late Latin name Seraphinus, derived from the biblical word seraphim which was Hebrew in origin and meant "fiery ones". The seraphim were an order of angels, described by Isaiah in the Bible as having six wings each.
Don't like either. Edmond is alright, but Persephone is awful.
