So I was told this recipe yesterday and couldn't believe how easy it was and now can't believe how great it tastes!
All you need is a 15oz can of pumpkin and a box of either white or spice cake mix (I used spice cake). Just mix the two together until well blended and then pour into baking cups in a muffin/cupcake tray and bake according to cake box directions (usually 15-20 minutes at 350) or until a toothpick comes out clean. It makes about 16-18 cupcakes/muffins.
I also just bought the store bought cream cheese icing and iced them and added a dash of nutmeg on top. They taste great and look like they were much harder to make than that!

Did you use a normal sized box?
The box usually says to add eggs, oil, etc. Did you just use the plain mix without the extra stuff and the pumpkin?
I'm going grocery shopping tomorrow and this sounds yummy!
