Can I make stuffing the day before?

I am going to make those stuffin' muffins from my nemesis rachael.  Probably not her recipe (not feeling the apples) but just the technique.  

 Could i make the stuffing the day before do you think and then  just put in the muffin tin on the day?

I don't mind cooking a lot on the day but I DETEST the vast quantities of dishes.  My dream would be to be mostly prepped tomorrow and then just have some 'cooking show' style  moves to do on Thursday.

    My mom is coming Wed afternoon to make the stuffing for the bird that is not being cooked until Thurs morning.

    I was afraid it would go soggy or something?  But I guess stuffing is kind of soggy anyway. We don't stuff the bird.  I do it separately b/c I don't eat meat.

  • Yea, I'm not sure why I even put "why not?" on there.  I think *I* was trying to figure out why not!?  wondering if maybe I shouldn't be doing it!  LOL

  • BTW, I plan on peeling and chopping but the carrots and potatoes either tonight or tomorrow night.  So all we have to do is boil.

    Other than the bird, and green bean casserole, that doesn't leave much prep for the day of.  :)

    will you keep the potatoes in water then?  I am going to cut my broccoli but I thought the potatoes would brown.

    How d'ya like my ambition to do all this_shit by myself with 3 kids under 5??  I'll be lucky if we get through the day with everyone alive.

    I wouldn't ever take these things on BUT I don't really stress about them because I know that I can fall back on Joe.  He takes the brunt of the stress over it.  I just do what I can, when I can and the rest falls on him.  He likes it that way (makes him feel needed) and I like it that way (I hate stress)!  :)

    Um, potatoes?  In water?  No idea.  Maybe I'll peel morning of!  LOL

    I can guarantee I'll be worrying about a neighbor calling CPS tomorrow afternoon from my yelling at the kids.  I am v. single minded and will end up hyper focusing on my stupid cooking prep!  I have in my head it'll be all fun and blog-like with them helping in their aprons and before long I'll be all 'no wire hangers'.

  • I always make the stuffing and sweet potato casserole minus the topping the night before, I plan on doing those tomorrow. I do cut the potatoes and leave them in water the nigh before too.

    (PS....I SUCK at multitasking.  MUST.COMPLETE.EACH.TASK....start to finish.  Then I can move on!  It's a sickness.  Really!)

  • I always do the stuffing the day or two before. It has to be cool before you stuff the turkey anyway so it's easiest to do ahead. I made ours yesterday bc we're going to the ILs and then I froze it so it would travel ok. Potatoes are fine to peel and cut ahead. Just stick them in a big pot of cold water to keep them from going brown. We usually put them in the fridge too or when I lived up north we put them in the garage to keep them relatively cool. Good luck cooking. I cooked off ad on yesterday. One batch of stuffing and two kinds of cookies. My mom made me two cheese balls to take to the ILs since she was in town and I made some apple cranberry sauce this morning that still hasn't set but I'm hopeful with it in the cooler. We'll see. I usually start cooking the weekend before when I can but I was working all weekend with two weddings.
