We are going to our neighbors house for Thanksgiving since we are not traveling, and I wanted to make this ahead of time to try it out. I made half the recipe and DH and I have been eating it non stop! It's awesome! Here's the full recipe. 8 ounces softened cream cheese1 cup light brown sugar2 cups pumpkin puree
1 teaspoon vanilla extract1 teaspoon cinnamon? teaspoon ginger? teaspoon nutmegGraham crackers, for servingShortbread cookies, for servingDirections
1. Place the cream cheese in a large bowl and stir with a rubber spatula just until the cream cheese is soft and smooth. Add the brown sugar and pumpkin puree. 2. Blend the mixture together with a hand mixer or blender. Mix until creamy and smooth. 3. Add vanilla extract, cinnamon, ginger, and nutmeg. Stir with a rubber spatula until smooth. 4. Place the pumpkin dip in a bowl and chill it in the refrigerator for 1 hour. 5. Serve the dip with graham crackers or shortbread cookies If you want to make sandwich cookies with the pumpkin dip, spread a heaping teaspoon of dip on the inside of one cookie. Place another cookie on top and gently press the cookies together.

Hmmm, I'm not sure about the apples. You taste more pumpkin than cream cheese. I like it with the shortbread cookies best, it would be good with gingersnaps too.

I make a slightly different version of this all the time (basically confectioners sugar instead of brown sugar), and it is delicious with apples! My favorite is the gingersnaps, though. I never thought to try shortbread with it - I bet that's yummy!
Oh, I'll have to try this one! I've been eating way too much pumpkin dip lately. We had a fall theme at my shower and everyone raved about the recipe my host made. I then made it for my work Thanksgiving potluck on Friday and had several people ask for the recipe...
8oz cream cheese
2 cups powered sugar
15 oz pure pumpkin
1 tsp cinnamon
1/2 tsp ginger
Blend cream cheese and sugar until smooth. Add pumpkin and spices and mix well. Chill 8 hrs. Serve with ginger snaps and apple or pear slices.

Sounds so delish! I am in charge of desserts for 20 ppl on Thanksgiving...maybe I will make a double batch of this in addition to all my other Costco bought goodies..lol.
