NBR: Cooking Question

I'm making soup and it said to whisk flour and milk and then add it to the rest of the soup, then let it simmer for 5-8 minutes until it thickens. So I did that and let it stay on the stove for 16 minutes. I don't think its thickened though. I'm putting it in the crockpot for the rest of the day, think it will thicken up or is there anything else I can do?

  • You may need a little more flour. Either that, or you didn't have it hot enough before turning down the heat setting on your stove to a simmer. You could try turning it up and getting it to an almost boil, then turn it down and let it sit for a few minutes to see if it will thicken before trying to add more flour.

  • You typically need to bring the liquid to a boil in order to thicken it w/ a roux. Maybe you didn't bring it to a high enough heat?

    If you are cooking it the crockpot it will probably reduce and thicken a bit more, so I would wait and see how it is when you're ready to eat it. If you have cornstarch you can take like a teaspoon of it and mix it with about 2 teaspoons of water then add that to the soup... it thickens really quick. 

  • Yep, I didn't have it on high enough heat. It actually turned out pretty good though! A little thicker may have been better but I'll know for next time-thanks! I also tried making a knockoff Olive Garden salad dressing recipe-it was a total fail though :(
