When I first saw the name I laughed...in a "that's cutesy" way.
But working in the Employment field, I have to say that my inital thought was the same as a lot of the responders who question whether its a name she can grow into. I dont know the answer. But I will say I went to law school with someone named Repunzelle. We all kind of looked at her weird when we first met her (the running joke, she didnt even have long hair! LOL)...to which she quickly replied, "yes I know, blame my mother...but it is what its is, it's my name." She is now a very successful lawyer doing employment discrimination work herself :-). So while she probably had a hard time as a child with her name (in fact she went by her middle name right up until 2nd year of law school, when she decided to own who she was)...I doubt she would say it has negatively impacted her career in anyway.
Yes hiring managers might say "what the hell," but I suppose in reality if someone is qualifed, someone is qualified. Also, I have seen managers put someone's resume into the "interview" pile just because they had to meet the person with the "weird/odd/different/funny/stripper ( ) name. So you never know.
While its not a name I would ever use...its your baby, and your name choice :-).

Which is basically when tons and tons of live fish wash up on the shores of Mobile Bay and the locals just go NUTS trying to scoop them all up. Free fish! So even though it is pretty much an awesome thing for the people involved, it is tons of fish washed up on shore, pretty gross. If there is a chance your child will ever live in the deep south, people will associate their name with this phenomenon.
Another thing I thought was interesting about your poll.. I noticed you didn't give an option for something like "Awesome name! Love it!" so it's like you are expecting people to hate it.
Would you consider naming her Julie/Julianne/Julia/Juliet and call her Jubilee as her nickname? I actually think Jubilee is a cute nn for a little girl, but would seriously hesitate giving it to someone as a legal name.
That way, you get to use the name you really love, but also give your daughter the option of using her more traditional legal name if she decides to do so (which she might not, or she may decide to use the legal name professionally, but keep the nickname personally).

If you love it, then go for it. If you're really worried about a grown woman having this name, give her a more traditional middle name she can use if she chooses.
Didn't read all the pp's, but I knew a little boy named Jubal as a kid. His mom said it was a biblical name - the first musician or something. Just throwing it out there

Jubilee Johnson sound too close to Juney Bee Jones which is a VERY popular little girl book series for ~8 year olds. That's the first thing I thought of. I don't like the name, but I like that YOU like it so much and that mattesr a lot.

I've seen so many people on here flip out when they get negative opinions on their names. You seem like such a reasonable and nice person. Good luck making your decision...naming another human being is hard work!
I had never heard the name Jubilee, but I like it. I ditto pps suggestion to pick a plain vanilla middle name, so she can choose for herself whether she wants the unusual name or the "normal" one. DH and I are doing that with our names. And definitely think through nicknames ahead of time - I personally like Julee.

You know, the funny thing is, after all these comments, I think I like the name MORE. Isn't that weird? It's like, I noticed myself getting all defensive or finding ways to dismiss people's comments and it dawned on me how much I really, really like this name! So. Good!
Here's the thing, what you want to name your kid is what you want to name your kid. But the one test that you should probably run any name through, especially the cutesy ones is, how would you react to a person with that name in a professional setting? I'm a fan of a lot of names that some people would find silly and, for each one, I've had to think, "Ok, if this kid went to apply for a job in the future, what would the boss think?"
With that being said, I think the name wouldn't really age well at all.
I am all for unique names, but I agree with this. At some point your child is going to be an adult competing in the professional world so it's a good idea to think about that.
