I see you are doing a chilli bar for LO's bday too. Can you think of anything else to go w/ it besides cornbread. I am stumped. I just feel like I should offer more than that. I know I can do a veggie tray or something..
I'm doing at least 2, maybe 3 kinds of chili: a just-meat 'texas bowl of red' one and a 3-4 bean vegetarian chili. The maybe is a veggie-laden chili or a white chicken chili. We'll do corn bread, fritos, corn chips, tortillas, pasta for a the weirdos and toppings... sour cream, a few cheeses, pico de gallo, chopped cilantro, 2-3 different hot sauces, jalapeno rings, chopped avocado, and maybe some more if I think of it. French fries and hot dogs would also be good picks.
We'll do dips and chips for when people arrive. Salsa, guac, maybe 7 layer dip, and some kind of cheese dip (probably velveeta & rotel). I'll also put out some cut veggies and hummus and some kind of sour creamy ranchy dip.
That sounds great, thanks for spelling it out. Im a little concerned that I liked your Christmas greeting card link, and now your menu. lol, pretty soon I will be asking you what to wear tomorrow. lol

Pretty much the whole rest of the party is going to be themed around Joaquin & Lamb's adventures so it would be super weird if you 'stole' the rest, heh. The invites we're using are super cool but I'm on my tablet, so I'll c&p later.

Over the weekend I got her picture taken with him, and I am going to crop me out and use that on her invites with some sort of rhyme. Havent got that far yet, but when I finish them, I will post.

Full disclosure, the reason I settled on chili is because I can do almost all the cooking way in advance and freeze it, then all I have to do day of is dump everything in crock pots, wedge up some limes, chop some cilantro and drink heavily. If November weren't so crazy I'd seriously consider doing the cooking like, tomorrow. lol.
