Dh and I are staying in tonight... grilling steaks outside. I decided to make twice-baked potatoes and spinach souffle- and both freeze wonderfully! So I quadrupled the potato recipe and now have 3 twice-baked potato casseroles in the freezer. I only had enough spinach to double that recipe, so only one in the freezer for now. Who knows if we'll still have them by the time le bebe arrives... I just love the fact that I have sides ready to go- just thaw and bake! Not the healthiest... but at least they're all natural- no yucky?artificial?ingredients!
