Pumpkin Seeds?

I have never attempted pumpkin seeds, and the few times my mom did they came out chewy and weird.

Anyone have an awesome recipe/instructions that is hard to screw up?  Please share!

    I baked pumpkin seeds into my lactation cookies.  I just purchased them raw and used them in place of nuts.

    Mine used to come out rubbery ntil I let them dry overnight before baking.  Toasted pumpkin seeds are y absolute favourite treat in the fall.
