Long time no see ladies!
I am in desperate need of some lighting fast dinner ideas. When DH is not working out of town he needs to be in bed around 7pm. So this doesnt leave me much time to deal with dinner. What are your go to meals? When he is OOT I just have whatever I have around the house.

Lightening fast.....salad or pasta or quesadillas or tj's ready to go freezer stuff or a pizza from papa murphy's. Not all of them are the healthiest, but some options are better than others.

Not a working mom, but I have trouble cooking with the kiddos under foot so I try to do the time consuming cooking on weekends. Sunday I grilled a bunch of chicken, made mashed potatoes, brocoli, and made a huge pot of chicken soup. So our dinners this week are all about chicken:
Sunday: Chicken, mashed potatoes and brocoli
Monday: Chicken soup, quesadillas
Tuesday: Asian cole slaw with chicken (using the bagged cole slaw mix in the produce section and making a quick peanut dressing)
Wednesday: Chicken tostadas (spread refried beans, cheese, and chicken on tortillas and bake on a cookie sheet for 10 min or until cheese melts, top with shredded cabbage, sour cream, salsa, guacamole)
Thursday: Chicken burgers and salad
I've been picking one or two things to make on the weekend and making 2-3 batches instead of just one, and freezing it. That way I've got a little stash with a lot of variety going on in my freezer. It's really hard, I am in the same boat, we are home at 5:45 and we aim for everyone to be in bed by 7, asleep by 7:30.
I've had luck with soups, lasagna, taco casserole, spaghetti sauce, meatloaf, those types of things. It just takes a lot of leg work to get it all set.
Not yet a working mom, but someone posted about crockpot lasagna on FB the other day, and I'm super excited to try it. Looks so simple.
