DD is obsessed with those mini muffins that you can buy in the snack food/bread area. But I am guessing they are pretty bad for you right? I don't know bc I never really look at labels. She asks for them at every meal (which we obviously don't indulge that often). So if I were to make a bunch - would making them from the box mix be any healthier? Or would I have to go from scratch? And any good (and easy) recipes that you guys like?
Re: Muffins
from scratch is always healthier. the box mixes have so many preservatives. plus muffins are probably the easiest thing to bake from scratch.
Here are a few of my favorite muffin recipes... you could easily make them in mini sized, just bake them for way less time.
I make these all the time. Both are really easy to make:

I always do the banana muffins in a mini muffin pan, then freeze the leftovers to use as daycare breakfasts later.
