But seriously, no one else has a favorite recipe?!  I'm drowning in zucchini and wanted to try a couple of different recipes (that others had tried/liked)

I have a really yummy zucchini cookie recipe at home.  They are one of my faves.  I will try to remember to dig it out tonight and come back and post it for you.

Paula Deen's recipe!  I have made about 24 loaves using this recipe this year and friends and family have raved about them.

Found it!  My great grandma used to make these, and then my grandma, then my mom, and I guess now I need to make them because digging the recipe out makes me really want some!

Zucchini Cookies

Beat together 2 c sugar, 1 c butter, 2 eggs.  Add 2 c grated zucchini.  Sift together 4 c flour, 1 tsp baking soda, 2 tsp cinnamon, 1 tsp cloves, 1 tsp nutmeg, and 1 tsp salt and slowly add to the creamed mixture.

Add 2 c chopped nuts (optional) and 2 cups raisins.  The key is to soak the raisins in hot water for about 10 minutes and then drain them before adding to the batter.  (They get nice and plump and yummy!)

Bake at 375 for 12-15 minutes. 

These freeze really well, too.

These zucchini pancakes by Ina Garten are really good and easy to make.  You can make them and let them cool, then freeze them.
