Do you put all of the BBQ sauce in while it's cooking, or do you save some for after? I have a simple recipe - just and onion, the loin and a bottle of sauce (planning to use Jack Daniels). But some I see are more complicated and some say to add sauce after.
ps - what I like about the crockpot is it's simplicity. I'm doing anything in the middle of the cooking time. Isn't the whole point for the food to cook itself without intervention? lol

I don't have much experience with that, but I would personally save some sauce for after - if it's already made sauce. Just to put on top of the meat when you eat it.
If you're making your own sauce in the crock pot I would just take some from the pot when you're serving it and pour it on top of the meat.
I'm a sauce person.

i just cooked a pork roast in the crock pot yesterday. i usually just season the roast with garlic and onion powder, salt and pepper, cook on low for 5 hours. then i shred the meat, add a little more salt and let cook for another hour. i don't add barbeque sauce until afterwards, only because i use some of the meat for carnitas tacos or burritos.
if i were only cooking it for barbeque sandwiches, then i would put the sauce in during the cook time, shred the meat and add a bit more.
I'm with happybride. Don't add the sauce until the meat is cooked! It gets gross.
I rub the pork roast with dry mustard, garlic powder, and a little bit of ground cloves. I cook the roast in the crock pot in beer, then let it cool a little on a cutting board, then shred and return to the crock pot until it's heated through again, about an hour on low.
