I usually just lurk here because I am just starting to eat dairy/soy free because DS has a sensitivity. We are having a family get together this weekend and I have no idea what I can make that I can eat but everyone else would like. Any ideas?
TIA

I make it ALL.THE.TIME!!!! and it's a perfect dish to bring with you (if you're looking for the desert type).
Couple of things...
I do not use blueberries -don't like the strong blue berry taste. I just put 1/4 cup of safe "enjoy life" chocolate chips instead (or nothing at all). You can put nuts if you want (or if you can).. but seriously, this is so delish and easy to make! i put it in the oven for 50 mins (not 1 hr).

MMM that look so yummy! I am baking that tonight. I have 2 bananas that are on their way to being to ripe.
what about a potato dish? cut a bunch of potatoes up into bite sized chunks, put them in a casserole and add olive oil/earth's best spread, seasonings (dill/garlic/oregano/rosemary- the possibilites are endless) and bake until tender. Super easy and delicious. You could use sweet potatoes or regular ones.

A German potato salad. I've made it a couple times...replacing regular potato salad and it's good.

I am going to try this roasted vegetable dish soon. She used root veggies, but I'm sure you could sub any veggie of your choice
