I just got through peeling and pureeing two bucketfuls of my garden tomatoes. It's simmering on the stove right now and seems a little on the runny side. Do you just simmer until it reduces?? Has anyone made homemade tomato sauce before? I read in one recipe that this woman simmers hers for 8-10hrs but I have to leave the house in about 2hrs. :P Obviously I should have done a little more research...

I simmered my peeled & seeded tomatoes for about 4 hours before I pureed them....after I pureed them I cook it for another 2 hours. After it cools I put them in 1 quart ziplock freezer bags.
For homemade pasta sauce I take 2 qts of tomato puree, 2 small cans of tomato paste with 2 cans of water, 3-4 gloves of garlic finely minced in a crockpot set on low for 8 hours. Add salt to taste and any other herbs & seasonings you would want. But I find just some salt, a little bit of basil is all you need. I also cook meatballs and italian sausage links in mine which gives it more flavor.
