Saw you were looking for a meatball recipe. I've been a pescatarian for 5 years so it's been a while since I made these, but this recipe might go well with your stuffed peppers (which I assume don't have meat in them?). I think it makes a lot as the recipe calls for 4lbs of meat, so it could definitely be cut in half if you don't want tons of leftovers.
Sweet and Sour Meatballs
1 diced onion
1 bottle hickory barbeque sauce
1 bottle spaghetti sauce w/mushrooms
1 firmly packed cup of brown sugar
1-2 tsp lemon juice
1 jar water
4 lbs ground beef or turkey
2 eggs
2 tb bread crumbs
salt, pepper, garlic
Brown onion slightly. Add both sauces and simmer 5 minutes. Add brown sugar + lemon; simmer 10 minutes. Add water.
Mix meat w/eggs, bread crumbs, salt, pepper + garlic. Drop meatballs in simmering sauce. Simmer for approx one hour.
