I like Chelsea and Seth. They're the lesser used of the two options, and sound fresh and interesting to me. I really like Joseph/Josephine as the middle name.

I like all your choices, but would go with Seth and Chelsea. Avery is very unisex and both Avery and Liam are overdone IMO.
