I definitely try to always give credit where it's due. I'm not enough of a cook or baker to ever take full credit for any of my recipes but I *will* alter them. Hell, I give my MIL credit for her alterations and she's a schiterei (Yiddish term for "little bit of this, little bit of that") baker/cook. I use her methods frequently.

lol, I actually know that term. My family is Jewish and my great Aunt uses Yiddish all the time.
I think if you get the chance you should take some classes. I know the CIA offers like week long classes, they are expensive but all inclusive and super intensive. From what I can remember the tuition for the continuing ed courses covers room, board, the classes, uniforms, possibly knives, books...you'd have to check online.

OMG... I just checked out some of the NY baking classes..... I think I know what I'm asking for as gifts for Hanukkah and my birthday!!! I want to do cake decorating, chocolate and confections, and home baking!! OMG OMG OMG OMG!

~faints~ That is my idea of heaven. I need to kill our kitchen aid. It was H's grandmothers and is on its last legs. He won't let me get a new one until this one is dead and gone.
