My kid will not eat anything except
yogurt
bananas
"snacks" (gold fish, yougurt melts, puffs, chips, cookies, JUNK)
chicken nuggets
the occasional chicken quesadilla
fruit of all kinds
She REFUSES pasta, won't even put it to her lips. HATES veggies, won't even look at them....
DH and I are trying really hard to do the "she eats what we eat" thing...so that I don't have to make more than one dinner every day, but she's just not having it and I am at my wits end.
Help me come up with toddler friendly things to feed this child that we, as adults, will also enjoy.
Or tell me I'm crazy and that normal toddlers eat yogurt and chicken nuggets for every.single.meal.

Hmm, that is tough. I guess we are of the school that you get served what everyone else is having. If you decide not to eat it, then you can wait until the next snack/mealtime to eat.
Of course I try to include a variety of things in each meal so that if there is one particular thing that one of the kids doesn't like, they are just asked to give it a try and if not, they leave it on their plate and eat the rest of the meal.
Typically, we'll do the main dish (if she will eat quesadillas, how about enchiladas or tacos where she can pick what she wants to put in it?), a side dish and a veggie/fruit. Will she help you prepare meals at all? That sometimes helps them get excited about eating what they've prepared. Or have her help you go grocery shopping - give her a choice of a couple veggies to buy and she can pick which one to put in the cart.
Will she eat from your plate? I find that DS may eat something from my plate while I eat but may not necesarily eat it at his table. If that's the case maybe feed her while you are eating.
Also -- I used to put veggies in his yogurt. Like pureed carrot, sweet pees or sweet potato.. Just mix it in there and she won't know the difference. You can add some veggies to her quesadilla. If you are able to give her pureed fruit -- I would add some pureed veggies to it -- again, she won't even taste it (banana and peas are great).

Ditto this. DD will only eat if she has a fork and is feeding herself.
If this is odd, my kid is in trouble! LO#1 is SERIOUS about his utensils. As soon as he gets in the highchair, he starts screaming about his "poon" and "furk". Try the Stonyfield Organics yogurt with the veggie puree mixed in. My kid also eats well in laps - like sometimes he will eat an entire meal (after being "all done") while sitting your lap.
