*NikCole and any other bakers:

Can you share some of your favorite cookie recipes? I have to bake some for our preschool picnic on Sunday, and I am going to the grocery store later today. Just looking for something fairly easy but delicious! And not the usualy choc chip, peanut butter, or sugar cookies. Any suggestions?

  • I made these twice in the last month... they are soooo good! They are a peanut butter oatmeal cookie w/ pb frosting. FYI- make them small, because they are rich.

    I love these (from the same blog) too. I've had an obsession with sandwich cookies lately ;)

    I have an awesome recipe for pumpkin cookies w/ chocolate chips. I make them a ton this time of year (I actually wanted to bake some this week, but was out of chocolate chips) They are the easiest cookie ever. I have the recipe saved in a word doc, if you'd like I can email it to you.

    Pumpkin Chocolate Chip Cookies

    ? cup white sugar

    ? cup brown sugar (packed)

    2 tbsp. honey
    1 cup canned pumpkin
    ? cup vegetable oil

    1 tsp. vanilla
    1 egg
    2 cups flour
    ? tsp. salt
    1 tsp. cinnamon

    ? tsp. nutmeg
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. milk
    1-cup chocolate chips
    ? cup chopped nuts, pecan or walnuts (if you choose, I don't use them)
     

    In a medium sized bowl add- flour, salt, cinnamon, nutmeg and baking powder (save baking soda), whisk together.

    In a separate (larger) bowl combine sugars, honey, pumpkin, veg oil, vanilla and egg- whisk together.  Dissolve baking soda in milk and add to pumpkin mixture. Add flour mixture a little at a time; careful not to over mix.  Fold in chocolate chips and nuts (if desired).

    Preheat oven to 375 degrees. Drop by the tablespoon full on lightly greased cookie sheet (or parchment lined, which is what I prefer) Bake for approx. 10-12 minutes. NOTE: Careful not to overcook. Cookies will be soft and moist. Leave cookies on sheet for 5 min and transfer to wire racks to cool completely before storing.
