How to make celery and lettuce last longer

I want to start doing salads for lunches again but my problem is that my lettuce and celery go bad soo quickly in my fridge. What do you do to keep them lasting longer and be able to re-use often?

Re: How to make celery and lettuce last longer

  • I have the same problem with celery.  I buy it to make soups but usually only need 2 stalks or so and then in less than a week, it's all rubbery.

I made minstrone earlier this week and am making homemade chicken noodle today to try and use it up.  Sometimes I eat cerery with PB but other than that I have no use for it!

I am not sure how to make it last longer.....

  • I saw something on pinterest. If you put individual servings into canning jars, it's supposed to make the lettuce last much longer.

  • I am not big on celery, so I do not buy it often. For lettuce I put it in quart size canning jars, and it lasts a long time. I have only had trouble with one type of lettuce that I grew in my garden not lasting well using this method. I think the trick to lettuce is to keep it an air tight container.

  • My mom always kept celery cut/cleaned into spears in water in the fridge. Helped keep it from drying out.

  • I learned this from a farmer at the farmers market and it works great for us.

I brink home my lettuce and wash it using water and baking soda since it's straight from the farm, to get bugs and stuff off, not sure if the baking soda is important here though. Afterward i wet down a tea towel, you could use paper towels though (we don't use them), and I lay the lettuce out flat on the towel and roll it up, secure with rubber band, and into crisper! Oh and I fold the bottom to make a tiny "pocket" so lettuce won't fall out

This exactly! And a wet paper towel around washed lettuce in a partially open ziplock helps with lettuce.
  • Celery will last weeks and still be crisp if you wrap it up in aluminum foil. I take lettuce out of the wrapping it comes in and put it in a plastic grocery store bag and it stays crisp.
