Trying to Get Pregnant

NTTP- Need freezer recipes...

Long story short, my aunt and uncle were in a horrible car accident. :( They were both in comas and my aunt just passed yesterday. I am flying to the east coast from M-F and I need to bake and freeze meals for DH and DS. DH isn't a great cook and I would feel better just making things for them that he can just throw in the oven. Any ideas? My mind is so boggled right now that I cant think of anything :( Any help would be great....TIA!

  • I'm so sorry for your family's loss.  This is an easy recipe to make and freezes well.

    Chicken Enchilada Casserole

    2-3 chicken breasts

    2 cans cream of chicken soup

    1 can chicken broth

    1 can diced green chilies

    1 small yellow onion diced

    8-10 corn tortillas

    1 bag Mexican shredded cheese

    1 tablespoon olive oil

    Salt & Pepper

     

    Heat skillet to medium high.  Dice chicken into bite size pieces, salt & pepper lightly, and brown in olive oil.  Dice onion, and add to skillet when chicken is cooked through. Sautee together for 2-3 minutes.  Add about ? of the chicken broth to deglaze bottom of pan.  Remove from heat and set aside.

     

    In a mixing bowl, mix together cream of chicken soup and remaining broth.  Whisk together until it forms a sauce consistency.  Stir in green chilies along with the chicken and onion mixture.

     

    In a 9x13 pan, put a layer of corn tortillas.  Pour 1/3 of soup mixture over tortillas, add 1/3 of the bag of cheese.  Add two more layer of tortillas, soup mixture, and cheese.

     

    Bake at 350 for 30 minutes.

     

    Tips:

    **If you are short on time or don?t want to sautee the chicken, you can use a rotisserie chicken.  Sautee onion in a little olive oil and mix everything together as noted above.

    What about going to the store and buying easy meals?

    -Rotisserie (sp?) chicken for Monday and a can of veggies

    -Pasta and a jar of sauce

    -Premade frozen burgers/turkey burgers

  • i froze batches of meatloaf and mac n cheese last week, and they have both come out very nicely after thawing.  i don't think there is a specific recipe for either that would make a difference, just whatever your normal recipe is for either.  

    i am sorry to hear about your family, t&p to you and your family.

  • You can make a hearty soup, which freezes/reheats well. And any casserole like broccoli, cheese, and ham.

And I was thinking of just making 2 or 3 recipes and they can have leftovers....Enchiladas will be great and I think I might make a double amount of spaghetti for them and maybe just bu ya freezer meal too. Thank you!  I feel like I cant think or do anything right, these past few days :(

  • So sorry to hear about your family Sad  T&P your way...

    Do you have a slow cooker?  You can pretty much cook anything in them... soups, stew..chicken, pork or beef.. Just drop in and turn on.  When I have to go on business trips, I usually just buy a bunch of frozen veggies, chicken breasts and boneless pork loin chops.. and those easy stove top mashed potatoes.  I tell DH to just throw the package of chicken with 2 cups of water into the slow cooker on low in the morning and it's ready by 5pm.  Frozen veg and mash are easy to do on the stove and take less than 10 min.

  • This is long and I am sorry but, my lasagna is a great freezer recipe. So this is what you'll need:

    1lb of ground beef or ground turkey

    1 medium onion (I use half of one) dice it up

    (1) 28 oz. can of tomatoes (diced if possible)

    (1) can of 12oz tomato paste

     1 and 1/2 tsp. salt

    1 tbs. of sugar

    1/2 tsp. of oregano

    1/2 tsp. of red pepper (if your DS doesn't like spicy things suggest to your DH to add some later)

    1/4 tsp. of garlic salt

    1 bay leaf

    14 lasagna noodles

    2 eggs

    1 15oz. ricotta cheese

     and finally a 16 oz. of mozzarella cheese diced in cubes

    First you will put the noodles on to cook.  Then cook the ground beef or turkey with the onions until the meat is brown.  While that is cooking put the tomato paste, can of tomatoes all of the dry ingredients in stur and cook on medium heat (no need to cover and I usually cook it for about 25 min.) when the meat is done cooking add that into the mix.  While all of that is going on dice up you mozzarella cheese and put in a bowl.  Then put ricotta cheese and eggs in a bowl and fork it together.  When the noodles are done, place those in a pan, then put half of ricotta cheese mixture, follow that with the diced cheese, and then put on the meat/tomato mixture on top.  Repeat this until your pan in full.  Cover and freeze.  For your DH he will want to preheat the oven to 375 F and cook for 55 min (Usually done at 45 min just depends on how high your freezer is). After it is done cooking let it set for 10 min.

  • How about Stouffer's frozen meals? The ones that I've tried taste pretty close to homemade. The mac & cheese, stuffed peppers, and lasagna are all very good.

  • So sorry for your loss. That's just awful. I saw that you said Crock Pot meals would be good. I found this link on Pinterest for frozen slow cooker meals. Chop it up, put it all in a freezer bag, and freeze until you need to cook it. HTH.
